Coriander is a thriving crop in the Indian subcontinent because of the availability of the required environment and climatic conditions. This makes India the largest producer of coriander in the world with more than 70% of the total world output.
Coriander is an important spice crop. Its leaves, also called green coriander, are popular in almost all parts of Asia and are used in India, Thailand, Vietnam and parts of China as a garnish for a variety of dishes. The aroma of this fruit is warm, nutty and spicy while the leaves have a strong odour. Coriander is an essential part of Indian masalas (curry powders). It’s often roasted or fried to enhance the flavour.
Coriander finds extensive application in several kinds of foods, beverages, liquors and perfumes. It is also valued as much for its medicinal properties as for its use as a condiment.
Cultivation
Coriander requires full exposure to sunlight, medium to heavy loamy soil, good drainage and well distributed moisture. The Indian tropical climate is suitable and favours the cultivation of this crop. This makes coriander a thriving crop in India with its quality enhanced by modern cultivation practices followed by Indian farmers.

Processing Care
The typical aroma and flavour of coriander seeds are not fully developed until they are completely dry. Usually, whole plants are spread out in the sun to dry. They are left to wither for two days until the moisture content is about 18%. Then they are threshed to remove the seeds, which are further dried to a final moisture content of 9%. In the second drying stage, the coriander is dried in the shade to prevent overheating of the seeds. The drying time depends on the climate. The clean seeds are then stored in bags or closed containers.
